The. Best. Apple. Pie. Period.

For this recipe, it’s important to use a variety of apples (3 to 5 different kinds).
– Fuji apples do well in a pie
– Red Delicious work, but are really hard to peel and slice–they tend to disintegrate
– Rome are excellent for pies, but are hard to find (they’re for baking rather than eating)
Apples shrink when they are cooked, so it’s best to pre-cook them to avoid a large empty space in your finished pie
Place apples and water in microwave-safe bowl and cover with plastic wrap. Poke a few holes in the plastic.
Precook apples in microwave for 10 min. Stir once or twice.
Mix the rest of the ingredients together with the apples and place in uncooked pie crust. (If using a solid top-crust, cut a few lines in it).
Sprinkle top of crust with cinnamon sugar. Cover edge of crust with 2-3” strip of foil. Bake at 350 for 35 minutes. Remove foil before last 10-15 min. of baking.
