Choose Your Apples Wisely
1

For this recipe, it’s important to use a variety of apples (3 to 5 different kinds).
- Fuji apples do well in a pie
- Red Delicious work, but are really hard to peel and slice--they tend to disintegrate
- Rome are excellent for pies, but are hard to find (they’re for baking rather than eating)

Pre-cook the Apples
2

Apples shrink when they are cooked, so it’s best to pre-cook them to avoid a large empty space in your finished pie

Place apples and water in microwave-safe bowl and cover with plastic wrap. Poke a few holes in the plastic.

3

Precook apples in microwave for 10 min. Stir once or twice.

Put it Together
4

Mix the rest of the ingredients together with the apples and place in uncooked pie crust. (If using a solid top-crust, cut a few lines in it).

5

Sprinkle top of crust with cinnamon sugar. Cover edge of crust with 2-3” strip of foil. Bake at 350 for 35 minutes. Remove foil before last 10-15 min. of baking.
